Green cedar balls is coming out of the brewery again, meaning that our new bottles has released from this year’s batch!

With great appreciation to whoever supporting Daijiro Sake, please let me share the fact that this year Daijiro Sake has accomplished its 25th anniversary. However, as you may know, the master brewer Daijiro would not care about it, but just keeps going on.
His sharp eyes are towards his Sake every day.

In September, we spent several days to harvest Sake rice.
This year most of our rice crops got the 1st grade as well as last year, but the yield was slightly lower probably because of hot weather during summer time.
Anyway, the brewing season has started!

Seattle, also known as Emerald City, was well modernized city but still remained its origin in downtown.

Portland, also known as City of Roses, was wonderful by means of the blend of city side and nature.
During his visit, he was lucky to visit the Sakeday event. He was impressed that people over there were not only proud of the spirit of cultivating their own culture but also introducing foreign products such as Sake.

“R5” represents Japanese calendar year “Reiw

“R5” represents Japanese calendar year “Reiwa” year “5”, which is equal to 2023.
“BY” represents Sake brew year. It starts from October 1 of every year.
Not always but you may find that in Sake labels, after then you could probably be getting mazed into the deep Sake world.
In R5, it was very hot in summer days again and unfortunately had less harvest of rice. In our case,however, thanks to our cooperate farmers, we could brew as much Sake as we planned.

19’s Sake project is our long tail annual event

19’s Sake project is our long tail annual event in collaboration with coming of age youngsters and good old retailers (In Japan, legal drinking alcoholic beverages is 20 years old.) The purpose of this project is to know how Sake is made by participating the entire procedures from rice cultivation to brewing. Of course we don’t do any compromises for good experience to participants. This year we had the 12th round and are waiting for the bottling, then open it with them when the meetup at the last day of this winter brewing season.
After that, 19’s Sake will be available to all of you over 20 in Japan.
You can also find that every year the label is different.
